Yamada Seiyu’s Manufacturing Process (Production Method)

Roasting

Artisans use all five senses to assess the day’s weather, humidity, and the
condition of the sesame seeds, making subtle adjustments to the roasting
process. There is no set manual. This judgment cannot be entrusted to
machines; it is a skill unique to skilled artisans and has been passed down
unchanged since the company’s founding.

First Press

The sesame seeds are pressed only once. Only about 30% of the sesame’s oil
content is extracted; the remainder is left unpressed. While a second or third
pressing would increase the yield, it would also introduce a harsh, bitter taste.
Yamada Seiyu refuses to compromise on this point, producing only the clear,
rich first-press oil.

Refining Process

From roasting to pressing, hot water washing, settling, and refining—a process
taking about one month—we have upheld this method unchanged for over 90
years since our founding. We use absolutely no chemicals or additives. By
refining with firewood rather than gas, we achieve the sesame oil’s smooth, light
finish.

    We specialize in first-press extraction, which yields only about 30% of the
    sesame seeds’ oil content. By completely avoiding second and third pressings,
    we achieve a clear, rich flavor so pure it is often described as “drinkable,” free
    from any off-flavors or bitterness. This uncompromising extraction method is
    the cornerstone of our quality.

  • 02. A Pure Product with Zero Additives or Chemicals

    A pure product containing absolutely no chemical seasonings, colorants,
    preservatives, or chemicals. The only ingredient is sesame. True to the phrase
    “no gimmicks,” this simplicity—free from unnecessary additives—is the primary
    reason it has been supported by health-conscious consumers for over 90
    years.

    We visit production areas both domestically and abroad to build trusting
    relationships with farmers from the ground up. The quality of our handcrafted
    products, finished by skilled artisans using their intuition and experience, has
